COLLARD SALAD RECIPE
makes 2-4 servings

1/2 large bunch of collard greens or 1 small bunch
1/4 cup tahini sauce (4 tbsp tahini + juice of 1 lemon + 3 tbsp water…mix together until creamy)
2 sweet potatoes, cubed & roasted
2 beets, steamed & cubed
1 cup cooked beans, I used Camellia Crowder beans
1/4-1/2 cup sauerkraut
1/4 cup toasted pumpkin seeds or nuts (I didn’t have any seeds ? but I would’ve added them)
1/2 tsp salt
dash of cayenne
1 tsp fennel seeds
sprinkle of fresh black pepper

Wash the collard greens.
Remove the tough stems on the collards, and stack the leaves.
Roll the leaves and slice them into thin strips (aka chiffonade).
Place the greens into a mixing bowl, and top with tahini sauce.
Use your hands to massage the sauce into the greens until they are tender.
Add the roasted sweet potatoes, beets, beens, and all of the other ingredients.
Toss well then serve!!!!!!!!! So good and hearty. I hope you LOVE it ?
