Something like a pancake, maybe even a dessert. Pizzelles are YUMMMYYYY, Quick & Easy To WHIP Up, Literally.

RECIPE
3/4 cup organic sugar
1/2 cup water
1/4 cup oil (vegetable, canola, or light olive)
1 tsp. vanilla
1 tsp. anise extract (or almond extract)
1 3/4 cups white rice flour
2 tsp. baking powder

Preheat and grease your pizzelle maker according to its instructions. To a bowl, add sugar, water, oil, vanilla extract, and anise extract. Stir well. Add rice flour, and baking powder. Stir well. Drop rounded tablespoons of dough onto the pizzelle maker and close to bake. (My pizzelles took about 45 seconds to bake, but follow the instructions of your pizzelle maker.) Remove carefully and transfer to a plate to cool and harden. Repeat with the remaining dough. Store the pizzelles in an air-tight container. Makes about 22 pizzelles. (I received my pizzelle maker as a gift years ago, but you can buy similar makers on Amazon.)
